{"id":93,"date":"2021-03-07T19:40:47","date_gmt":"2021-03-07T19:40:47","guid":{"rendered":"https:\/\/lifelovescake.com\/?p=93"},"modified":"2021-03-07T19:40:47","modified_gmt":"2021-03-07T19:40:47","slug":"upside-down-fruit-cake-with-cinnamon","status":"publish","type":"post","link":"https:\/\/lifelovescake.com\/?p=93","title":{"rendered":"Upside- down Fruit Cake with Cinnamon"},"content":{"rendered":"<p><strong><u>Upside- down Fruit Cake with Cinnamon<\/u><\/strong><\/p>\n<p>For the topping:<\/p>\n<ul>\n<li>70g <strong>unsalted butter<\/strong>, softened<\/li>\n<li>70g light <strong>brown sugar<\/strong><\/li>\n<li>1 large ripe<strong> banana<\/strong>, sliced<\/li>\n<li>\u00bd fresh <strong>pineapple<\/strong>, diced into 1cm cubes<\/li>\n<li>1 ripe <strong>mango<\/strong>, diced into 1cm cubes<\/li>\n<\/ul>\n<p>For the cake:<\/p>\n<ul>\n<li>190g <strong>unsalted butter<\/strong>, softened<\/li>\n<li>190g light <strong>brown sugar<\/strong><\/li>\n<li>1 teaspoon <strong>pure vanilla extract<\/strong><\/li>\n<li>a pinch of <strong>salt<\/strong><\/li>\n<li>3 large <strong>eggs<\/strong><\/li>\n<li>190g <strong>all-purpose flour<\/strong><\/li>\n<li>1 \u00bd teaspoons <strong>baking powder<\/strong><\/li>\n<li>1 \u00bd teaspoons <strong>ground cinnamon<\/strong><\/li>\n<\/ul>\n<p><strong>Instructions<\/strong><\/p>\n<ol>\n<li>Preheat your oven to 180\u00b0C. If fan-assisted to 160\u00b0C. Line a 24cm diameter baking tin with baking parchment.<\/li>\n<li>For the topping, beat 70g softened butter and 70g light brown sugar together until creamy. Spread over the base of the lined cake tin. Mix all fruit in a bowl until well combined. You can sprinkle the fruit with a tiny bit of lemon juice, if you like. Place the fruit on the butter\/ sugar mixture and spread evenly.<\/li>\n<li>Place 190g softened butter, 190g golden caster sugar, salt and 1 tsp vanilla extract in a bowl and beat until fluffy and well combined using a mixer. Add 3 eggs one at a time. Stir in 190g self-raising flour, 1 \u00bd tsp baking powder, and cinnamon. This you can do with a spatula. The consistency should be soft and easy to spread.<\/li>\n<li>Place batter on top of the fruit and smooth it out so it\u2019s level. Bake for 40 minutes. Let the cake cool for around 10 minutes. Then run the egde of the tin with a knife and turn out onto a plate.
