Banana Pancakes

2 very ripe bananas, smushed with a fork

1tbs honey

pinch of salt

200g plain yoghurt

1 egg

200g flour

½ ts baking powder

 

also required:

sunflower oil

powdered sugar

 

This one is child- approved and is requested at least twice a week. It’s so easy and quick to make, and frankly, truly delicious (husband nods and asks for pancakes, although child is visiting grandparents).

Combine all ingredients in a bowl. Heat a pan with about 5 tbs of neutral oil (I use sunflower oil) to medium heat. Place 3 tbs of batter in the pan and fry slowly until golden, flip very gently (the batter is still runny on top), repeat, sprinkle some powdered sugar on top, add fruit if desired.

If you like, you can dab a paper towel on top of pancakes to soak up access oil.

Side note: be careful with your heat setting – the pancakes burn fairly quickly when the heat is too high.
