Potato Pizza

Potato pizza

 

  • 300 g mashed potatoes, cool (you can cook them the day before)
  • 50 ml Sunflower oil
  • 250 ml plain yogurt
  • 125 g plain flour
  • 2 eggs
  • 200 g feta cheese, mashed with a fork
  • 1 shallot, finely diced
  • 1 pinch of sugar
  • salt and black pepper to taste
  • couple of drops of lemon juice

 

This is a simple and quick one. My daughter calls it `Potato pizza´ so I´ll just go with that…

It´s fairly straight forward: Preheat the oven to 190°C. Take a large bowl and add all ingerdients.

Stir gently with a spatula until an even batter has formed. Line a rectangular baking pan (I use a 22cm x 30cm one) with baking paper and distibrute the batter evenly.

Bake for 30 to 40 minutes- depending on your oven. Let it cool and then cut into squares.

I like to have a scoop of plain yoghurt and salsa with it.
